Seems like every menu these days is offering some version of “street tacos”—and understandably so. Tacos are fantastic. But I say: What about trail tacos?

Besides being delicious, tacos are lightweight, easy to pack, and you can customize them to the liking of you and your crew. This recipe is vegetarian, and to you meat-eaters out there: Trust me. I love a beef taco as much as the next camper, but you won’t even notice that this taco is veggie. Oh, and if you’re vegan, just sub out the queso. Also, one additional tip: Make sure to quickly heat up your tortillas either on the skillet or just directly over the fire. Toasting the tortillas = more flavor = a happy belly.

This recipe takes:

  • nine ingredients;
  • 20 minutes to make;
  • a packweight of 2.2 lbs (1 kg).
